The Miracle Of Healing

 It was a beautiful Thursday morning in June and I’d decided to do some vacuuming just in case anyone came by over the weekend. My oldest grandson was home from Japan on leave from the Navy. He and his fiancée were getting married that Saturday, which was also my birthday.

   While I was vacuuming, my tiger cat, Morris, kept winding himself around my legs for attention. When I was finished with the vacuum, I started wrapping the long cord around its proper place while the opposite end was still plugged into the wall about ten feet away. Just as I was going to walk over and unplug it, Morris came around and nearly tripped me, but I caught myself.

   As I did, the cord came out of the wall, whipped around, and hit me right in the eye. I hurried to get some ice to put on it, and then called my optometrist’s office to see how quickly I could get in. My doctor was going to be out for a few days, but they got me in the next day with a different doctor.

   When I went to see the doctor the next day, he told me that the injury had broken the laser implant they’d put in eight years prior when I had my cataracts removed. He gave me drops to use four times a day and told me to return on Tuesday to see my regular eye doctor, who is also a surgeon. I went home with my eye drops and was amazed that I didn’t have a black eye, but I couldn’t see anything out of that eye.

   I went to the wedding the next day, and it was beautiful. The couple returned to Japan for the honeymoon because my grandson had to get back to his Navy base. The next Tuesday I went to the optometrist’s office and he confirmed that the implant was broken. I was to continue using the drops until I could have it replaced two weeks later.

   The big day finally came and another daughter-in-law took me in for the surgery. They put me in the chair and hooked me up to oxygen and heart monitors, and they had an IV ready to put in my arm. I asked the nurse why all of that was necessary and she told me it was because I’m seventy-five years old and I have asthma. They just wanted to make sure I was fine during the surgery.

   The doctor came in and sat down in front of me and looked at my bad eye with his instrument and then he sat back in his chair. He looked at my eye again and told the nurse not to turn anything on. I asked him if something was wrong.

   He smiled and said, “I have been an optometrist for many, many years, and I have never seen this happen. The eye is healing itself and within two to three months you will have full vision restored, but if you don’t, you come back.”

   I smiled as I thanked him and went home to Morris. Within one month the eye was perfect. Even the doctor agreed that I had a miracle.

BUTTERNUT SQUASH PIE

INGREDIENTS:

1/4 cup butter, melted

2 cups crushed gingersnaps

20 oz butternut squash, peeled, seeded and cubed (about 3 cups)

1-1/4 cups nonfat Greek yogurt

5 egg yolks

3/4 cup brown sugar

1-1/2 tsp. pumpkin pie spice

DIRECTIONS:

Toss gingersnaps with melted butter in a bowl. Spread into the bottom and up the sides of a 9-inch pie plate. Refrigerate for 15 minutes. Take out of the refrigerator and bake at 350 degrees for 12-15 minutes until lightly browned. Then, let cool.

Turn oven temperature up to 400 degrees.

Put butternut squash in a microwave-safe bowl and microwave for 5-6 minutes, until fork-tender. Puree squash and remaining ingredients in a food processor or blender until smooth.

Pour into crust. Bake in 400-degree oven for 15 minutes. Lower oven temperature to 350 and bake another 40-50 minutes until set.
